Lemon-Ginger Rubbed Lamb
5-6 Lamb Rib Chops
1 T Lemon Zest
2 tsp Freshly Chopped Ginger
1 tsp Freshly Chopped Garlic
2 tsp Kosher Salt
1 tsp Cracked Pepper
Combine all ingredients in a bowl and mix well. Heat a sauté pan with oil on medium-high heat. Press lamb into the rub to make sure the lamb is completely coated. Gently place the lamb in the pan and cook approximately 2 minutes on each side. If cooking the whole rack, cook 5-6 minutes on each side and finish in a 350 degree oven for about 10 minutes.
